Twiddley Tracy, as the rumour goes, simply can’t help herself! Not only does she add the best twiddley bits to her sewn samples but when she teaches a class (or visits the shop) Tracy brings the most deeeeelishious home baking with her. Tracy didn’t disappoint yesterday as she brought the most scrumptious tea loaf. Erika asked for the recipe which I have duly scrounged and it is here for all to poach and enjoy.
Twiddley Tracy’s Tea Loaf Recipe
1lb mixed dried fruit ( raisins, sultanas, currants )
7ozs soft brown sugar
1/2 pint hot strong tea
1 medium/large egg
9ozs self raising flour
2lb loaf tin, lined or well greased. set oven to warm 140* fan oven, 160* conventional
Place fruit and sugar in a mixing bowl and pour over hot tea
Beat egg and stir through fruit and tea
Mix in flour
Pour into tin and bake in centre of oven for 1 and a quarter to 1 and a half hours until golden and springy to touch
Slice thickly and butter
Enjoy with a cup of tea!
